Minky is a favorite for dolls. Another I see is deer suede but it is expensive at $10 yard. Both of these fabrics were used in the Esty Pin-up Doll pattern from Dolphinwing. You seem to be close to finishing the test doll.. having body and now head ideas complete.
Have you thought about the fabric? Color and textures are a consideration.. cost and availability too.
