So how do you keep the padding from moving into the joint area? Do you encapsulate the padding, or stitch it to the inner wall of the leg, or just hope it doesn't move?

Yes, that was my biggest concern, too. Since the skin material is a thick felt, I would have used needle felting technique from outside, if I had to, to prevent such an undesirable move. It turned out fortunately that no such fixing was necessary at all.
The padding is quite secure because:
- Regular polyester fill is used, not cluster type
- Surface friction level of the skin (felt) is high
- I pack the fill super tight (my style)

I learnt all by myself -- many hours of researches, thinking, trials & errors over nearly 3 years. I wish someone could teach me, but there's no school for making lifesize companion dolls.
I tried different materials such as yarn, wood, clay, etc. also.
