Yeah, that's Nitinol wire. Nickel & Titanium.
Interesting stuff, but not much in the way of animatronics that I can figure.
The action is created by a heat & cool cycle which is fairly slow process. That demo may have been sped up.

That's correct. Nitinol/Muscle wire relies on the heat generated from the resistance of the wire. It can also be very finicky to even set the shape you want 'remembered ', as you need to apply heat then quench the wire. Overheating and fractures are very common. I would sick with small solenoid actuators.
