I think lighting has a lot to do with shoots but I'm not real smart on that...I guess it's trial and error??

There are a lot of really good youtube videos outlining how to get professional level lighting for photography without having to have all the expensive equipment.

Yup. You can have a ton of creative freedom nowadays since you don't have to blast your subject with light just to get exposure proper/noise reduction. A relatively cheap LED panel with a high CRI, throw some diffusion on it and you're set
